Make dressing
In a small bowl or jar combine 3 tablespoons extra-virgin olive oil, 1 tablespoon red wine vinegar, 1 teaspoon fresh lemon juice, 1/2 teaspoon minced garlic, 1/2 teaspoon dried oregano, 1/2 teaspoon Dijon mustard, 1/4 teaspoon honey or sugar, 1/4 teaspoon salt and 1/8 teaspoon black pepper. Whisk or shake vigorously until emulsified. Taste and adjust seasoning; set aside 5 minutes to let flavors meld.
Sandwich Assembly & Prep
Prepare roll
If using a sandwich roll or ciabatta, split it horizontally. Lightly butter the cut sides with 1 tablespoon softened unsalted butter, spread evenly. Optionally toast buttered sides in a skillet over medium heat for 1–2 minutes until lightly golden.
Dress lettuce and vegetables
Place 1 cup chopped butterhead lettuce, 1/4 cup thinly sliced red onion and 1/4 cup sliced banana peppers in a bowl. Pour about 2 tablespoons of the prepared Italian dressing over them and toss gently to coat. Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Taste and add more dressing if desired.
Layer meats and cheese
On the bottom half of the warm (or room-temperature) roll, layer 6 slices black forest ham and 6 slices genoa salami, slightly overlapping. Top the meats with 4 slices provolone cheese, arranging to cover evenly.
Chop & finish (optional chopped style)
For a true 'chopped' sandwich texture: using a sharp knife, roughly chop the layered meats, cheese and dressed lettuce mixture 3–4 times in place until bite-sized pieces form but remain loosely piled. Alternatively, leave layers whole for a classic stacked sandwich.
Assemble
Spoon the dressed lettuce, onions and banana peppers on top of the cheese (or mixed in if chopped). Drizzle an additional 1 teaspoon of dressing over the top if desired. Close the sandwich with the top roll. Press gently to compact the filling slightly.
Slice & serve
Using a sharp knife, cut the sandwich in half (or into thirds for sharing). Serve immediately while bread is warm and crisp. Provide extra Italian dressing on the side if desired.
