Make crab mixture

In a large bowl gently combine jumbo lump crab meat, breadcrumbs, mayonnaise, Dijon, Worcestershire, chopped parsley, chopped scallion, egg, Old Bay, salt, and pepper. Use a light touch to keep lumps intact — do not overmix. Taste a small bit of the mixture (remove a tiny crab piece first) and adjust salt or Old Bay if needed.

Form cakes

Divide mixture into 4 equal portions and gently shape into compact patties about 3 inches across and 1 inch thick. Place on a tray and refrigerate for at least 20 minutes to firm up (or up to 2 hours).

Pan-sear crab cakes

Heat a large skillet over medium heat and add vegetable oil and 1 tablespoon butter. When shimmering, add crab cakes (do not overcrowd). Cook 3–4 minutes per side until golden brown and heated through, adding remaining tablespoon butter toward the end and spooning melted butter over the cakes. Transfer to a warm oven (200°F / 95°C) or a plate tented with foil to keep warm.

Curry Hollandaise

Prepare double boiler

Bring a small pot of water to a gentle simmer. Use a heatproof bowl that sits above the water without touching it (double-boiler). Keep the water at a gentle simmer — too hot will scramble the eggs.

Whisk yolks

In the heatproof bowl, whisk the egg yolks with lemon juice and white wine vinegar until smooth. Place over simmering water and continue whisking constantly until the mixture thickens slightly and becomes pale (about 2–3 minutes).

Emulsify with butter and curry

Remove the bowl from heat. Very slowly drizzle the warm melted butter into the yolk mixture while whisking continuously to create an emulsion. If the sauce becomes too thick, whisk in 1 teaspoon of warm water to loosen. Stir in curry powder, cayenne (if using), and salt. Taste and adjust lemon, salt, or curry to preference. Keep warm in the bowl set over but not touching the warm water or in a thermos.

Poached Eggs & Assembly

Poach eggs

Bring a wide shallow saucepan of water to a gentle simmer (not a roil). Add white vinegar and salt. Create a gentle whirlpool with a spoon and slip one egg at a time into the center. Poach 3–3.5 minutes for runny yolks or 4 minutes for slightly firmer yolks. Use a slotted spoon to lift eggs and drain on a paper towel-lined plate.

Toast English muffins

While eggs are poaching, split and toast English muffins until golden. Keep warm.

Assemble plates

Place a toasted English muffin half (2 halves per serving) on each plate. Top each half with a warm crab cake. Carefully place a poached egg on top of each crab cake (one egg per cake). Spoon 2–3 tablespoons of warm curry hollandaise over each egg and crab cake. Sprinkle snipped chives and a light grind of black pepper on top. Serve immediately with lemon wedges on the side.

Finishing & timing tips

If serving multiple plates, keep crab cakes warm in a low oven and hold hollandaise over very low simmer. Poach eggs last so they are freshest. Total suggested plating: 2 crab-cake-topped muffin halves per person with 2 poached eggs and hollandaise.
