Prepare glass

If serving chilled but without ice in the glass, place a coupe or martini glass in the freezer for 10–15 minutes; otherwise fill the serving glass with ice to chill while you build the drink.

Dry shake (if using egg white)

In a cocktail shaker add vodka, blue curaçao, lemon juice, simple syrup and egg white. Seal and shake vigorously without ice for 10–15 seconds to emulsify and build foam.

Wet shake

Add ice to the shaker (about 4–6 large cubes or ~1 cup). If you did the dry shake, pour ice in and shake again vigorously for 12–15 seconds. If you skipped the dry shake, combine all cocktail ingredients and ice, then shake for 12–15 seconds until well chilled and slightly diluted.

Add bitters

Open the shaker, add 2 dashes of Angostura bitters to the shake (they will help ground the sweetness and add aromatic complexity).

Strain

Double-strain the cocktail into the chilled coupe or a rocks glass filled with fresh ice, using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and any egg white solids.

Top (optional)

If you prefer a lighter, fizzed version, top with 1.5 oz club soda or sparkling water very gently to preserve the foam and avoid flattening the color.

Garnish & serve

Express a lemon twist over the drink to release oils, then drop it in or perch a lemon wheel on the rim. Serve immediately.
