Make honey syrup

Combine honey and water

Measure equal parts honey and hot water (for this recipe use 0.75 oz honey + 0.75 oz hot water). Place honey in a small heatproof container and pour the hot water over it.

Stir until smooth

Stir until the honey fully dissolves into a clear, pourable syrup. Let it cool to room temperature (about 5–10 minutes) before using.

Build and shake

Add 2 oz gin, 0.75 oz fresh lemon juice, and 0.75 oz cooled honey syrup into a cocktail shaker.

Fill the shaker with ice (about 6 medium cubes).

Shake vigorously for 12–18 seconds until the shaker is very cold and some frost forms on the outside. This both chills and slightly dilutes the drink for balance.

Strain the cocktail through a fine mesh strainer (or double strain if using fresh lemon pulp) into a chilled coupe or martini glass.

Garnish and serve

Express the oils of a lemon twist over the drink by holding the twist over the glass and giving it a quick pinch, then run it around the rim and drop it into the glass.

Optionally float an edible flower or a small sprig of thyme on the surface for an aromatic accent.
