Method

Beef Tenderloin Preparation

    Prepare the Steak

    Take the filet mignon out of the refrigerator and allow it to come to room temperature, about 30 minutes.

    Season the Steak

    Season the steak generously with salt and black pepper on both sides.

    Sear the Steak

    Heat olive oil in a skillet over high heat until shimmering. Sear the steak for 3-4 minutes on each side for medium-rare.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5 minutes before slicing.

Duck Fat Fingerling Potatoes

    Preheat Oven

    Preheat the oven to 400°F (200°C).

    Prepare Potatoes

    Toss the fingerling potatoes with duck fat, salt, and rosemary in a bowl.

    Roast Potatoes

    Spread the potatoes on a baking sheet and roast for 25-30 minutes until crispy.

Seasonal Vegetables

    Blanch Vegetables

    Blanch asparagus, carrots, and bell pepper in boiling water for 2-3 minutes until tender-crisp.

    Cool Vegetables

    Drain and immediately transfer to an ice bath to stop cooking.

Red Wine Demi-Glace

    Sauté Shallots

    In the same skillet used for the steak, add shallots and sauté until translucent.

    Make the Sauce

    Add red wine and beef stock, bring to a boil, and reduce by half.

    Finish the Sauce

    Finish with butter for a glossy finish, stirring until melted.
