Preparing the Curry

Cook Aromatics

In a large pan, heat the vegetable oil over medium heat. Add onion and bell pepper, sauté until softened, about 5 minutes.

Add Curry Paste

Stir in the green curry paste and cook for another 2 minutes until fragrant.

Combine Ingredients

Add the cubed tofu or chicken, vegetable broth, coconut milk, soy sauce, and lime juice. Stir well to combine.

Simmer

Bring the mixture to a simmer and cook for 10-15 minutes, until the protein is cooked through and the sauce thickens slightly.

Finish with Scallions and Basil

Stir in the chopped scallions and remove from heat. Garnish with fresh basil before serving.

Cooking the Rice and Naan

Cook the Rice

In a pot, bring water to a boil. Add the jasmine rice, cover, and reduce heat to low. Cook for 15 minutes, then remove from heat and let sit covered for an additional 5 minutes.

Warm the Naan

While the rice is resting, warm the naan bread in a skillet or oven as per package instructions.
