Pulled Pork

Prepare the Pork
In a slow cooker, combine the pork shoulder, chopped onion, minced garlic, smoked paprika, brown sugar, cumin, salt, and black pepper. Pour in the apple cider vinegar and chicken broth.

Cook the Pork
Cover and cook on low for 8 hours, or until the pork is tender and easily shreds with a fork.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks. Return the shredded pork to the slow cooker to soak up the juices.
BBQ Sauce

Make the BBQ Sauce
In a bowl, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, salt, and black pepper. Mix well.

Combine with Pork
Add the BBQ sauce to the shredded pork in the slow cooker and stir to combine. Let it cook for an additional 30 minutes on low.
Slaw

Prepare the Slaw
In a large bowl, mix together shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, salt, and black pepper. Adjust seasoning to taste.

Assemble the Sandwich
Toast the brioche buns lightly. Spoon the pulled pork onto the bottom half of the bun, top with slaw, and spread mayonnaise on the top half. Serve immediately.
