Winemaking Process

    Harvesting the Grapes

    Carefully hand-harvest the ripe Pinot Grigio grapes in the early morning to preserve freshness.

    Crushing and Pressing

    Destem and crush the grapes to extract the juice. Press the grapes to separate the juice from the skins.

    Fermentation

    Transfer the juice to fermentation tanks and add the selected yeast. Allow fermentation to occur at controlled temperatures (12-18°C) for about 14-21 days.

    Clarification

    Once fermentation is complete, racking off the wine from the sediment to clarify it.

    Aging

    Allow the wine to age in stainless steel tanks for 2-3 months to develop its flavor profile.

  6. 6

    Bottling

    Once aged, the wine is filtered and bottled. Add sulfur dioxide to stabilize the wine before sealing.
