Prepare the Fries

    Cut and Fry the Potatoes

    Wash and cut the Russet potatoes into thin strips. Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

Make the Spicy Cheese Sauce

    Prepare the Cheese Sauce

    In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1 minute. Gradually add the milk, whisking constantly until thickened. Stir in the cheddar cheese, diced jalapeño, paprika, and salt. Keep warm.

Assemble the Loaded Fries

    Layer the Ingredients

    On a large serving platter, layer the fried potatoes. Drizzle with spicy cheese sauce, then sprinkle with crumbled bacon. In a small bowl, mix the sour cream with lime juice, then drizzle over the fries. Top with sliced green onions and diced tomatoes.
