Prepare the Demi-Glace

    Make the Demi-Glace

    In a saucepan, combine the beef stock and red wine. Simmer over medium heat until reduced by half. Stir in the crumbled Stilton cheese until melted and well combined. Set aside.

Cook the Pasta

    Cook the Tagliatelle

    In a large pot of boiling salted water, cook the tagliatelle according to package instructions until al dente. Drain and set aside.

Sauté the Beef and Mushrooms

    Cook the Beef

    In a large skillet, heat olive oil over medium-high heat. Add the sliced beef sirloin and season with salt and black pepper. Sauté until browned, about 3-4 minutes. Remove from skillet and set aside.

    Sauté the Mushrooms

    In the same skillet, add more olive oil if needed and add the wild mushrooms and minced garlic. Sauté until the mushrooms are tender and golden brown, about 5-6 minutes.

Combine and Serve

    Mix Together

    Return the cooked beef to the skillet with the mushrooms. Pour in the Stilton demi-glace and toss to combine. Add the cooked tagliatelle and mix well, ensuring the pasta is coated with the sauce.

    Garnish with chopped fresh parsley and additional crumbled blue cheese if desired. Serve hot.
