Method

Prepare Chicken

1

Marinate Chicken

In a large bowl, combine olive oil, salt, black pepper, garlic powder, onion powder, and paprika. Add the chicken leg quarters and coat well. Marinate for at least 1 hour or overnight in the refrigerator.

2

Grill Chicken

Preheat your grill to medium-high heat. Grill the marinated chicken for about 30-35 minutes, turning occasionally, until the internal temperature reaches 165°F (75°C). Brush with BBQ sauce during the last 10 minutes of grilling.

Prepare Mac & Cheese

3

Cook Pasta

In a large pot, cook the elbow macaroni according to package instructions. Drain and set aside.

4

Make Cheese Sauce

In the same pot, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk, cooking until thickened. Add in cheddar cheese, salt, and pepper until melted and smooth.

5

Combine

Add the cooked macaroni to the cheese sauce and mix well. Keep warm until serving.

Prepare Slaw

6

Mix Slaw Ingredients

In a large bowl, combine shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Toss until well combined and refrigerate until ready to serve.

Prepare Street Corn

7

Grill Corn

Preheat your grill to medium heat. Grill corn on the cob for about 10-12 minutes, turning occasionally, until slightly charred.

8

Dress Corn

In a bowl, mix mayonnaise, Cotija cheese, chili powder, and lime juice. Brush this mixture over the grilled corn before serving.
