Method
Prepare the Croquettes

Cook the Walu
Steam or poach the Walu fish until fully cooked, about 10 minutes. Let it cool, then flake the fish into small pieces.

Mix Ingredients
In a large bowl, combine the flaked Walu, chopped Napa cabbage, green onions, panko breadcrumbs, beaten egg, sesame oil, salt, and black pepper. Mix until well combined.

Form the Croquettes
Using your hands, form the mixture into small oval shapes (about 2 inches long).
Fry the Croquettes

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium heat until shimmering.

Fry the Croquettes
Carefully add the croquettes in batches to the hot oil. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
Serve

Plate and Garnish
Serve the croquettes hot with soy sauce and chili sauce on the side for dipping.
