Soup Base

Method

Preparation

  1. 1

    Prepare the Ingredients

In a large pot, heat a bit of oil over medium heat. Add the leeks, garlic, and ginger, sautéing until soft and fragrant.

  2. 2

    Make the Soup Base

Add the cubed ʻulu, vegetable broth, and coconut milk to the pot. Stir in the curry powder, salt, and black pepper. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the ʻulu is tender.

  3. 3

    Blend the Soup

Use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.

  4. 4

    Add Lobster

Stir in the chopped lobster meat and let it heat through for an additional 5 minutes.

Serving

  1. 5

    Plate the Soup

Ladle the soup into bowls and garnish with caviar, fresh chives, and a squeeze of lemon juice.
