Method

Prepare the Beef Tenderloin

    Wrap the Beef

    Preheat your oven to 400°F (200°C). Season the beef tenderloin with salt and black pepper. Wrap the prosciutto slices around the beef, covering it completely.

    Sear the Beef

    Heat olive oil in an oven-safe skillet over medium-high heat. Sear the wrapped beef on all sides until golden brown, about 2-3 minutes per side.

    Roast the Beef

    Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.

    Rest the Beef

    Remove the beef from the oven and let it rest for 10 minutes before slicing.

Prepare the Mushroom Sauce

    Sauté the Mushrooms

    In a saucepan, melt butter over medium heat. Add the chopped mushrooms and sauté until browned, about 5 minutes.

    Add Garlic and Cream

    Add minced garlic and cook for another minute. Pour in the heavy cream and thyme, and simmer for 5-7 minutes until thickened.

Prepare the Creamed Luau

    Cook the Kalo

    In a pot, bring water to a boil and add the cubed kalo. Cook until tender, about 15-20 minutes.

    Mash and Mix

    Drain the kalo and return it to the pot. Add coconut milk and salt to taste. Mash until smooth and creamy. Stir in chopped green onions.

Serve

    Plating

    Slice the rested beef tenderloin and serve it alongside the creamed luau and drizzle with mushroom sauce.
