    Prepare the Heʻe

    Clean the heʻe thoroughly and marinate it with olive oil, lemon juice, salt, and black pepper for at least 30 minutes.

    Prepare the Sunchokes

    Wash and scrub the sunchokes, then slice them thinly. Toss with olive oil, salt, black pepper, and red chili flakes. Set aside.

Cooking

    Grill the Heʻe

    Preheat the grill to medium-high heat. Grill the marinated heʻe for about 3-4 minutes on each side until cooked through and slightly charred.

    Cook the Sunchokes

    In a skillet, heat a bit of olive oil over medium heat. Add the sliced sunchokes and sauté until golden and tender, about 10-12 minutes.

    On a serving plate, arrange the grilled heʻe and top with sautéed sunchokes. Sprinkle with breadcrumbs, lemon zest, and garnish with celery leaves. Serve warm.
