In the same skillet, add the diced sweet potatoes and cook until they are tender and slightly caramelized, about 10-12 minutes. Stir occasionally.

Add the chopped green onion, sriracha maple syrup, and Korean 3 spice to the sweet potatoes. Stir to combine and cook for an additional 2-3 minutes.

Combine and Serve
Mix the cooked bacon into the sweet potato mixture. Serve the hash topped with the fried eggs and a slice of toasted sourdough or white bread.
