    Make the Sea Salt Vanilla Bean Ice Cream

    In a medium saucepan, combine heavy cream, whole milk, and sugar. Split the vanilla bean and scrape the seeds into the mixture. Heat until the sugar dissolves but do not boil. In a separate bowl, whisk the egg yolks. Gradually add the warm cream mixture to the yolks, whisking continuously. Return to the saucepan and cook until thickened. Stir in sea salt. Chill in an ice cream maker according to manufacturer instructions.

    Prepare the Bourbon Anglaise

    In a saucepan, combine heavy cream and sugar. Heat until the sugar dissolves. In a bowl, whisk the egg yolks. Slowly add the warm cream mixture to the yolks. Return to heat and cook until thickened. Stir in bourbon. Cool before serving.

    Fry the Brioche

    Heat a skillet over medium heat with a little butter. In a bowl, mix cinnamon and sugar. Lightly fry each slice of brioche until golden brown on both sides. Remove and toss in the cinnamon sugar mixture.

    Assemble the Dish

    Slice the fresh strawberries. On a plate, place the fried brioche slices, top with sliced strawberries, a scoop of vanilla bean ice cream, drizzle with honey, and sprinkle with bee pollen. Serve with a side of bourbon anglaise.
