Prepare the Pork Belly
Preheat your oven to 375°F (190°C). Season the pork belly with Korean 3 spice. Place it in a baking dish and roast for about 25-30 minutes, or until the skin is crispy and the meat is tender. Once done, let it rest before slicing.

Cook the Sweet Potatoes
While the pork is cooking, peel and dice the sweet potatoes into small cubes. Boil them in salted water until fork-tender. Drain and set aside.

Combine Ingredients
In a large mixing bowl, combine the sweet potatoes, grilled onions, and chopped green onions. Mix gently.

Assemble the Hash
In a serving dish, layer the sweet potato mixture, then top with slices of crispy pork belly and the fried eggs. Drizzle with sriracha aioli.

Serve with Bread
Toast the slices of sourdough or white bread and serve alongside the hash.
