Cooking Instructions

  1. 1

    Prepare the Pork Belly

Preheat your oven to 375°F (190°C). Season the pork belly with Korean 3 spice. Place it in a baking dish and roast for about 25-30 minutes, or until the skin is crispy and the meat is tender. Once done, let it rest before slicing.

  2. 2

    Cook the Sweet Potatoes

While the pork is cooking, peel and dice the sweet potatoes into small cubes. Boil them in salted water until fork-tender. Drain and set aside.

  3. 3

    Grill the Onion

Slice the onion and grill it in a pan over medium heat until caramelized and golden brown. Set aside.

  4. 4

    Cook the Eggs

In the same pan, crack the eggs and fry them to your liking (sunny side up or over easy).

  5. 5

    Combine Ingredients

In a large mixing bowl, combine the sweet potatoes, grilled onions, and chopped green onions. Mix gently.

  6. 6

    Assemble the Hash

In a serving dish, layer the sweet potato mixture, then top with slices of crispy pork belly and the fried eggs. Drizzle with sriracha aioli.

  7. 7

    Serve with Bread

Toast the slices of sourdough or white bread and serve alongside the hash.
