Prepare the Aioli

In a bowl, mix together the mayonnaise, Sriracha, and lemon juice until smooth. Set aside.

Cook the Chorizo

In a pan over medium heat, crumble and cook the chorizo until browned. Remove from the pan and set aside.

Grill the Onions

In the same pan, add sliced onions and cook until caramelized. Set aside.

Form and Cook the Burgers

In a bowl, combine ground beef with the cooked chorizo. Form into patties and season with salt and pepper. Grill or pan-fry the patties over medium-high heat for about 4-5 minutes per side, or until cooked to your liking.

Melt the Cheese

During the last minute of cooking, place a slice of cheddar cheese on each patty to melt.

Assemble the Burger

On the bottom half of each bun, layer arugula, the burger patty with melted cheese, grilled onions, and fresh tomato slices. Drizzle with Sriracha aioli and top with the other half of the bun.

Fry the Potatoes

Prepare either shoestring fries or sweet potato fries according to package instructions or fry them fresh until crispy.

Serve

Serve the Gaucho Burger with a side of fries.
