    Prepare the Ingredients

    Start by chopping the pancetta or guanciale into small cubes. Grate the Parmesan cheese and set aside. In a bowl, beat the eggs and mix with grated Parmesan and black pepper.

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Reserve about 1 cup of the pasta cooking water, then drain the pasta.

    Cook the Pancetta

    In a large skillet over medium heat, add the pancetta or guanciale. Cook until crispy and golden, about 5-7 minutes. Remove from heat.

    Combine Everything

    Quickly add the hot pasta to the skillet with the pancetta, tossing to combine. Remove the skillet from heat. Stir in the egg and cheese mixture, adding reserved pasta water a little at a time until the sauce reaches your desired creaminess.

    Serve immediately, garnished with additional Parmesan cheese and black pepper to taste.
