Marinate the Chicken
In a large bowl, combine buttermilk, hot sauce, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Add chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours or overnight.

Prepare the Breading
In a shallow dish, place all-purpose flour. Season with additional salt and pepper if desired.

Fry the Chicken
Heat oil in a deep skillet over medium-high heat. Remove chicken from the marinade, allowing excess to drip off, then dredge in the seasoned flour. Fry the chicken in batches, cooking for about 5-7 minutes per side or until golden brown and cooked through. Drain on paper towels.

Toast the Brioche Rolls
While the chicken is frying, toast the brioche rolls until golden brown.

Assemble the Sandwich
On the bottom half of each toasted brioche roll, place a piece of fried chicken, followed by a slice of pepper jack cheese and dill pickle slices. Top with the other half of the roll.
