Burger Preparation
- 1
Prepare the Beef Patties
Divide the ground beef into two equal portions and shape them into loose balls. Avoid compacting them too much to ensure a juicy burger.
- 2
Season the Patties
Sprinkle salt and black pepper on both sides of the beef balls.

- 4
Smash the Patties
Place the beef balls on the hot skillet and use a spatula to smash them down into thin patties. Cook for 2-3 minutes until a crust forms.
- 5
Add Cheese
Flip the patties and place a slice of Yancey's Fancy NYS Extra Sharp Cheddar cheese on each. Cook for another 1-2 minutes until the cheese is melted.
- 6
Toast the Brioche Rolls
While the burgers are cooking, cut the brioche rolls in half and toast them face down on the skillet until golden brown.
- 7
Assemble the Burger
Spread garlic aioli on the bottom half of each toasted brioche roll. Place the cheeseburger patty on top, followed by crispy onions and dill pickle slices. Drizzle with Asylum Porter mustard and place the top half of the roll.
