    Activate the Yeast

    In a large bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Make the Dough

    Add the flour and salt to the yeast mixture. Mix until a dough forms and knead for about 5-7 minutes until smooth.

    Let the Dough Rise

    Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Shape the Pretzels

    Preheat the oven to 425°F (220°C). Punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel.

    Prepare Baking Soda Bath

    In a large pot, bring 10 cups of water and baking soda to a boil. Boil each pretzel for about 30 seconds on each side.

    Egg Wash

    Place the boiled pretzels on a baking sheet lined with parchment paper. Brush each pretzel with beaten egg and sprinkle with coarse sea salt.

    Bake in the preheated oven for 12-15 minutes or until golden brown.

    Allow pretzels to cool slightly before serving. Enjoy with Craftsman Lager cheese or Asylum Porter mustard.
