Roast the Garlic

Preheat your oven to 400°F (200°C). Cut the tops off the garlic bulbs to expose the cloves. Drizzle with olive oil and sprinkle with salt and pepper. Wrap each bulb in aluminum foil and roast in the oven for about 30-35 minutes, or until the cloves are soft and caramelized.

Prepare the Toast Points

While the garlic is roasting, prepare your toast points. Cut the bread into quarters. Optionally, brush with olive oil and sprinkle with salt. Toast in the oven or on a skillet until golden brown.

Mix Goat Cheese and Balsamic

In a small bowl, mix the goat cheese with balsamic vinegar until smooth and creamy. Add herbs if using. Set aside.

Assemble and Serve

Once the garlic is roasted, allow it to cool slightly. Squeeze the garlic cloves out of their skins onto a serving platter. Serve with the goat cheese mixture and toast points on the side.
