Grilled Chicken with Brown Rice and Broccoli
Method
Preparation and Cooking Instructions
- 1
Prepare the Chicken
In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Rub the mixture over the chicken breasts, ensuring they are well coated. Let marinate for at least 30 minutes.
- 2
Cook the Brown Rice
In a medium saucepan, bring 2 cups of water to a boil. Add the brown rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 45 minutes, or until the rice is tender and the water is absorbed.
- 3
Grill the Chicken
Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side or until fully cooked and juices run clear. Remove from the grill and let rest for a few minutes.
- 4
Steam the Broccoli
While the chicken is grilling, steam the broccoli florets in a steamer basket over boiling water for about 5-7 minutes, or until vibrant green and tender-crisp.
- 5
Serve
Slice the grilled chicken and serve it over a bed of brown rice with broccoli on the side. Drizzle with lemon juice for added flavor.
