    Prepare the Steak

    Season the NY Strip steak generously with salt and freshly cracked black pepper on both sides.

    Sear the Steak

    In a large skillet, heat olive oil over medium-high heat. Add the steak and sear for about 4-5 minutes on each side for medium-rare. Adjust time for desired doneness. Remove steak from the skillet and let it rest.

    Make the Sauce

    In the same skillet, reduce the heat to medium and add butter. Once melted, add minced garlic and cook until fragrant, about 30 seconds. Carefully add cognac and let it simmer for 1-2 minutes, scraping up any browned bits from the bottom of the pan.

    Finish the Sauce

    Add heavy cream and crushed black peppercorns to the skillet. Stir and simmer for 3-5 minutes until the sauce thickens. Adjust seasoning with salt to taste.

    Serve

    Slice the steak and drizzle the cognac and peppercorn sauce over the top. Garnish with fresh parsley and serve immediately.
