    Toast and crisp

    Bring a small skillet or griddle to medium heat. Lightly butter both sides of each sourdough slice with the unsalted butter and brush with olive oil. When the pan is hot, add the bread and toast 1.5–2 minutes per side until golden brown and crisp. Sprinkle the toasted slices with the 1/4 tsp sea salt while warm. Remove and set on a rack.

    Make the tangy spread

    In a bowl, combine the softened cream cheese and Greek yogurt. Add lemon zest, lemon juice, honey, 1/8 tsp fine sea salt, and 1/4 tsp freshly ground black pepper. Whisk or fold until smooth and spreadable. Taste and adjust: add up to another 1/2 tsp lemon juice or a pinch more salt if desired.

    Apply the spread

    Using a butter knife or offset spatula, spread about half of the cream cheese mixture evenly across each warm toast slice (roughly 3/8 cup per slice). Wipe the knife and reserve remaining spread for additional toasts or serving.

    Prep fresh toppings

    Thinly slice the radishes and cucumber. Halve, pit and thinly slice or fan the 1/2 avocado. Roughly toss the microgreens or baby arugula with the chopped dill and snipped chives; dress lightly with the 1/2 tsp extra-virgin olive oil and a squeeze of the lemon wedge (about 1/4 tsp juice) to moisten and bring brightness.

    Assemble fresh toppings

    On each spread toast, layer cucumber slices first, then arrange radish slices in a slightly overlapping pattern. Add avocado slices on top and finish with a small handful (about 2 tbs) of the dressed microgreens mixture. This builds texture and keeps softer ingredients from sliding.

    Finish and serve

    Sprinkle each assembled toast with everything bagel seasoning (about 1/2 tsp per slice) and a light pinch of flaky sea salt. Drizzle the remaining extra-virgin olive oil very lightly over the top (split the 1/2 tsp between slices). Cut each toast in half on the diagonal if desired. Serve immediately with the remaining lemon wedge for extra brightness.
