    Season & rest

    Pat lamb loins dry with paper towel. Season all over with kosher salt (about 3/4 tsp per piece) and freshly ground black pepper. Let rest at room temperature for 20–30 minutes while you prepare other components.

    Sear & roast

    Heat a heavy skillet (cast-iron preferred) over medium-high heat until hot. Add 2 tbs olive oil. When oil is shimmering, place lamb loins fat-side down and sear 2–3 minutes until a deep golden crust forms. Flip and sear the other side 1–2 minutes. Add 1 tbs butter, thyme sprigs and crushed garlic to the pan and baste the loins for 30–45 seconds.

    Finish to temperature

    Transfer skillet to a 400°F (200°C) oven for 4–6 minutes for medium-rare (internal 125–130°F / 51–54°C). For medium, roast 6–8 minutes (135°F / 57°C). Remove loins to a cutting board, tent loosely with foil and rest 6–8 minutes before slicing.

English pea purée

    In a small saucepan over medium heat, melt 1 tbs butter. Add finely chopped shallot and sweat gently until translucent, about 3 minutes — do not brown. Add frozen peas and 1/2 cup stock, bring to a simmer and cook 3–4 minutes until peas are tender and bright green.

    Transfer the pea mixture to a blender or food processor. Add lemon juice, 1 tbs extra-virgin olive oil, salt and pepper. Purée until very smooth, adding up to 1–2 tbs additional stock or water if needed to reach a silky consistency. Taste and adjust seasoning. Keep warm or chill slightly; reheat gently if cooled.

Baby turnips

    Bring a pot of salted water to a boil. Blanch baby turnips 2–3 minutes until just tender, then immediately transfer to ice water to stop cooking. Drain and pat dry.

    In a sauté pan over medium heat, warm 1 tbs butter and 1 tsp olive oil. Add blanched turnips cut side down (if halved) and cook 2–3 minutes to lightly brown. Sprinkle 1/2 tsp sugar and 1/4 tsp salt, add 1 tsp lemon juice, then reduce heat and cook another 1–2 minutes until glazed and tender. Stir in chopped parsley and remove from heat.

Pomegranate lacquer

    Combine 3 tbs pomegranate molasses, 1 tsp honey and 1 tsp red wine vinegar in a small saucepan over low heat. Whisk and simmer gently 1–2 minutes to marry flavors. If too thick, add up to 1 tsp water to loosen. Season with 1/4 tsp freshly ground black pepper. Keep warm at very low heat or room temperature — it should be glossy and pourable.

Preserved lemon & pistachio garnish

    Mix finely minced preserved lemon rind with toasted chopped pistachios, 1 tsp extra-virgin olive oil and 1/4 tsp fine sea salt. Set aside. This will provide bright, salty crunch for finishing.

Finish & plate

    Slice rested lamb loin into 4–6 medallions per piece (about 1/2-inch thick). Warm the pea purée if needed; spread 2–3 tbs pea purée on each plate as a base.

    Arrange 3–4 lamb medallions atop the purée. Place 3–4 glazed baby turnips beside the lamb. Spoon 1–1.5 tbs pomegranate lacquer over the lamb and a little around the plate to create a glossy lacquer; do not drown the meat — aim for a mirror sheen.

    Sprinkle about 1 tsp of the preserved lemon–pistachio mix across the lamb and turnips for brightness and crunch. Scatter a few pomegranate arils and microgreens or pea shoots for color and freshness. Finish with a light drizzle (about 1/2 tsp) of extra-virgin olive oil and a pinch of flaky sea salt if desired.
