    Chill glass

    Place a rocks glass or coupe in the freezer for at least 5 minutes or fill with ice and water to chill while you prepare the cocktail.

    Measure ingredients

    Measure the aged rum, Dolin Blanc (or sweet vermouth), fresh lime juice, pineapple juice, simple syrup, and orange curaçao into a jigger or measuring cup so they are ready to add to the shaker.

Mixing

    Add the measured aged rum, Dolin Blanc (or sweet vermouth), fresh lime juice, pineapple juice, simple syrup, and orange curaçao to a cocktail shaker.

    Add 2 dashes of Angostura bitters to the shaker to add aromatic depth and a hint of spice.

    Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker becomes very cold and slightly frosted.

Strain & Serve

    Remove the chilled glass from the freezer or dump the ice/water used to chill it. If using a rocks glass, add a large ice cube or fill with fresh crushed ice depending on your preference.

    Double-strain the cocktail (using a Hawthorne strainer and a fine mesh strainer) into the prepared glass to remove small ice shards and any pulp for a clean texture.

    Garnish with a pineapple leaf or a lime wheel placed on the rim. Optionally express an orange peel over the drink and discard for an added citrus aroma.
