Measure and combine
Add the rye whiskey, dry vermouth, Cherry Heering, fresh lemon juice, Suze (if using), and simple syrup into a cocktail shaker.

Dry shake
Add the egg white (or aquafaba) to the shaker. Seal and shake vigorously without ice for 20–30 seconds to emulsify and build a silky foam.

Wet shake
Add a generous amount of ice to the shaker and shake again vigorously for 15–20 seconds until well chilled and the shaker is frosty.
Strain & Serve

Double-strain the cocktail through a Hawthorne strainer and a fine mesh strainer into a chilled coupe glass (or a rocks glass over one large ice cube if preferred). This removes ice shards and ensures a smooth texture.

Garnish by expressing the lemon twist over the drink (twist to release oils) and drop it in along with a Luxardo cherry perched on a pick or rested in the glass.

Adjust the Cherry Heering and simple syrup to taste if you prefer a drier or sweeter drink. The Suze adds a pleasant bitter gentian note; omit if you want a more classic cherry-forward profile.
