Method

Preparation

  1. 1

    Prepare the Seafood

Ensure that the shrimp are peeled and deveined, the crab meat is lumped, and the oysters are shucked. Set aside.

Cooking

  1. 2

    Make the Roux

In a large pot, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly until the mixture reaches a dark brown color, about 15-20 minutes.

  2. 3

    Sauté the Vegetables

Once the roux is ready, add the chopped onion, green bell pepper, celery, and minced garlic. Sauté for about 5-7 minutes until the vegetables are softened.

  3. 4

    Add the Liquids

Stir in the chicken or seafood stock, tomato paste, Worcestershire sauce, and hot sauce. Bring the mixture to a boil.

  4. 5

    Season the Gumbo

Add the bay leaves, dried thyme, smoked paprika, cayenne pepper, salt, and black pepper. Reduce the heat and simmer for about 30 minutes.

  5. 6

    Add the Seafood

In the last 10 minutes of cooking, add the shrimp, crab meat, and oysters to the pot. Cook until the shrimp are pink and opaque.

  6. 7

    Serve

Remove the bay leaves, and serve the gumbo hot over cooked rice. Garnish with chopped green onions.
