Method

For the Sautéed Gulf Grouper

    Prepare the grouper

    Pat the Gulf grouper fillets dry with a paper towel. Season both sides with salt and black pepper.

    Heat the oil

    In a large skillet, heat olive oil over medium-high heat.

    Sauté the garlic

    Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.

    Cook the grouper

    Place the seasoned grouper fillets in the skillet and cook for 4-5 minutes on each side, or until the fish flakes easily with a fork.

    Add lemon juice

    Drizzle lemon juice over the cooked grouper and sprinkle with chopped parsley before serving.

For the Steamed Red Potatoes

    Prepare the potatoes

    Wash and halve the red potatoes.

    Steam the potatoes

    Place the halved potatoes in a steamer basket over boiling water. Cover and steam for about 15-20 minutes, or until tender.

    Add seasoning

    Once cooked, transfer the potatoes to a bowl. Add butter, salt, and chopped chives. Toss gently to combine.

For the Roasted Cauliflower with Cumin

    Prepare the cauliflower

    Preheat the oven to 425°F (220°C). Wash and cut the cauliflower into florets.

    Season the cauliflower

    In a large bowl, toss the cauliflower florets with olive oil, ground cumin, salt, and black pepper until well coated.

    Roast the cauliflower

    Spread the cauliflower in a single layer on a baking sheet and roast in the preheated oven for 25-30 minutes, or until golden brown and tender, stirring halfway through.

For the Mango Chutney

    Prepare the chutney

    In a mixing bowl, combine diced mango, chopped red onion, cilantro, lime juice, sugar, and salt.

    Mix well

    Toss all ingredients together until well combined. Allow to sit for 10 minutes for the flavors to meld.
