Roast the Tenderloin
Place the seasoned beef tenderloin on a roasting pan. Roast in the preheated oven for about 25-30 minutes for medium-rare. Use a meat thermometer to check for an internal temperature of 135°F (57°C).

Rest and Slice
Once done, remove the beef from the oven and let it rest for 10 minutes before slicing.

Prepare the Garlic
While the potatoes are boiling, peel and smash the garlic cloves. In a small saucepan, melt the butter over low heat, then add the garlic and cook until fragrant, about 2-3 minutes.

Prepare the Vegetables
Wash and peel the carrots, then slice them into bite-sized pieces. Trim the ends off the asparagus.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the carrots and sauté for 5 minutes. Then add the asparagus, salt, and pepper. Cook for an additional 5-7 minutes, until the vegetables are tender.
