Roasted Beef Tenderloin

    Prepare the Tenderloin

    Preheat your oven to 425°F (220°C). Rub the beef tenderloin with olive oil, and season it generously with salt, black pepper, minced garlic, rosemary, and thyme.

    Roast the Tenderloin

    Place the seasoned beef tenderloin on a roasting pan. Roast in the preheated oven for about 25-30 minutes for medium-rare. Use a meat thermometer to check for an internal temperature of 135°F (57°C).

    Rest and Slice

    Once done, remove the beef from the oven and let it rest for 10 minutes before slicing.

Garlic Mashed Potatoes

    Boil the Potatoes

    Peel and chop the russet potatoes into equal-sized chunks. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes.

    Prepare the Garlic

    While the potatoes are boiling, peel and smash the garlic cloves. In a small saucepan, melt the butter over low heat, then add the garlic and cook until fragrant, about 2-3 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add the garlic butter mixture, milk, salt, and black pepper. Mash until smooth and creamy.

    Prepare the Vegetables

    Wash and peel the carrots, then slice them into bite-sized pieces. Trim the ends off the asparagus.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the carrots and sauté for 5 minutes. Then add the asparagus, salt, and pepper. Cook for an additional 5-7 minutes, until the vegetables are tender.
