Method

Poached Eggs

    Prepare the Poaching Liquid

    In a medium saucepan, bring 4 cups of water to a gentle simmer. Add 1 tablespoon of white vinegar to the water.

    Poach the Eggs

    Crack each egg into a small bowl and gently slide into the simmering water. Poach for about 3-4 minutes or until the whites are set and yolks are still runny. Remove with a slotted spoon and set aside.

Homemade Biscuits

    Mix Dry Ingredients

    In a large bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, and 1 teaspoon of salt.

    Cut in Butter

    Cut in 1 stick of cold unsalted butter until the mixture resembles coarse crumbs.

    Add Milk and Form Dough

    Stir in 3 tablespoons of milk until just combined. Turn out onto a floured surface and knead gently 5-6 times. Roll to 1-inch thickness and cut into rounds.

    Bake the Biscuits

    Preheat the oven to 450°F (232°C). Place the biscuits on a baking sheet and bake for 10-12 minutes or until golden brown.

Applewood Bacon

    Cook the Bacon

    In a skillet over medium heat, cook 4 slices of applewood smoked bacon until crispy, about 5-7 minutes. Remove and set on paper towels to drain.

Melted Havarti Cheese

    Melt the Cheese

    In the last few minutes of cooking, place 2 slices of Havarti cheese on top of the poached eggs in the saucepan. Cover to melt for about 2 minutes.

Sawmill Sausage Gravy

    Cook the Sausage

    In a large skillet, crumble and cook 1 pound of breakfast sausage over medium heat until browned.

    Make the Gravy

    Sprinkle 1/4 cup of all-purpose flour over the sausage and stir to combine. Gradually add 2 cups of milk, stirring constantly until the gravy thickens, about 5 minutes.

    Season the Gravy

    Season with 1 teaspoon of salt and 1 teaspoon of black pepper. Stir well and keep warm.
