Preparation of Ingredients

    Prepare the Bibb Lettuce

    Carefully wash the Bibb lettuce under cold running water to remove any dirt or debris. Pat dry with a clean kitchen towel or use a salad spinner to remove excess water. Tear the lettuce into bite-sized pieces and place it in a large salad bowl.

    Prepare the Pickled Red Onion

    If using store-bought pickled red onion, measure out 1 cup and set aside. If making your own, slice a red onion thinly, place it in a jar, and cover with vinegar and water. Let it sit for at least 30 minutes to pickle.

    Prepare the Heirloom Tomato

    Wash the heirloom tomatoes under cold water and pat dry. Cut the tomatoes into wedges or slices, depending on your preference, and set aside.

    Prepare the Goat Cheese

    Using your fingers or a fork, crumble the goat cheese into small pieces. Set aside for topping the salad.

Assembling the Salad

    In the bowl with the torn Bibb lettuce, add the prepared pickled red onion, sliced heirloom tomatoes, and crumbled goat cheese.

    Gently toss all the ingredients together until evenly mixed. Be careful not to bruise the lettuce.
