Gulf Redfish

    Prepare the Redfish

    Rinse the Gulf Redfish fillets under cold water and pat them dry with a paper towel. Season both sides with salt, black pepper, and lemon zest.

    Cook the Redfish

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned redfish fillets and cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork. Remove from heat and keep warm.

Delta Grind Grits

    Cook the Grits

    In a medium saucepan, bring 4 cups of water and 1 tsp of salt to a boil. Slowly whisk in the delta grind grits. Reduce the heat to low, cover, and cook, stirring occasionally, for about 20-25 minutes until the grits are thick and creamy.

    Finish the Grits

    Once cooked, remove from heat and stir in the butter and cheddar cheese until melted and well combined.

Broccolini

    Prepare the Broccolini

    Trim the ends of the broccolini and rinse under cold water. Mince the garlic cloves.

    Cook the Broccolini

    In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the broccolini, season with salt, and cook for about 4-5 minutes until tender but still vibrant green. Remove from heat.

Lemon Butter Crabmeat Sauce

    Make the Sauce

    In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Stir in the lemon juice and cook for an additional minute.

    Add the Crabmeat

    Gently fold in the crabmeat and chopped chives. Cook for another 2-3 minutes just until warmed through. Season with salt to taste.
