Cake Preparation

Melt Chocolate and Butter
In a heatproof bowl, combine the unsweetened chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method), stirring until melted and smooth. Remove from heat and allow to cool slightly.

Mix Sugar and Eggs
In a separate bowl, whisk together granulated sugar, large eggs, large egg yolks, and vanilla extract until the mixture is pale and slightly thickened.

Combine Mixtures
Gradually add the melted chocolate mixture to the egg mixture, stirring continuously to avoid cooking the eggs.

Add Flour and Salt
Sift in the all-purpose flour and add a pinch of salt. Gently fold until just combined; do not overmix.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 2/3 full.

Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is still soft.

Cool Slightly
Remove from the oven and let the cakes cool in the ramekins for 1-2 minutes before inverting onto plates.

Top each lava cake with a scoop of vanilla ice cream, and sprinkle with powdered sugar. Garnish with fresh berries and serve immediately while the center is molten.
