Calamari Preparation

Prepare the calamari
In a large bowl, combine the flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

Coat the calamari
Dip the calamari rings into the egg mixture, allowing excess to drip off. Then, dredge them in the flour mixture until fully coated.

Heat the oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 375°F (190°C). Use a thermometer for accuracy.

Fry the calamari
Carefully add the coated calamari rings to the hot oil in small batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Add tomatoes and spices
Pour in the crushed tomatoes, then add the dried oregano, dried basil, salt, black pepper, and sugar. Stir to combine.

Simmer the sauce
Reduce the heat to low and let the sauce simmer for about 20 minutes, stirring occasionally. Adjust seasoning to taste.
