Preparation of Ingredients

    Prepare the Bagel

    Slice the bagel in half and toast it until golden brown.

    Prepare the Tomato

    Cut the medium tomato in half and grill it on a pan until slightly charred.

    Fry the Onions

    Slice the onion thinly, coat it lightly with all-purpose flour, and fry in hot oil until golden brown. Drain on paper towels and set aside.

Poaching Eggs

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the water. Poach for about 3-4 minutes, or until the whites are set but the yolks remain runny. Remove with a slotted spoon and set on a plate.

Making Chive Hollandaise Sauce

    Prepare the Hollandaise Sauce

    In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens. Gradually add the melted butter while whisking until fully incorporated. Stir in the chopped chives, salt, and black pepper to taste.

    On the toasted bagel, layer the smoked salmon, followed by the poached eggs. Top with grilled tomato halves and drizzle generously with chive hollandaise sauce. Finally, sprinkle the fried onions over the top.
