    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add salt and slowly whisk in the guinea flint grits. Reduce the heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally until thick and creamy. Stir in 2 tablespoons of butter and set aside.

    Cook the Candied Bacon

    In a skillet over medium heat, cook the candied bacon until crispy. Remove from the skillet and place on paper towels to drain, then chop into bite-sized pieces.

    Sauté the Shrimp

    In the same skillet with bacon drippings, add the shrimp and season with black pepper. Sauté for 2-3 minutes until shrimp turn pink and opaque. Add Levi's Creole sauce and stir to combine. Cook for an additional 2 minutes.

    Assemble the Dish

    To serve, spoon the grits onto a plate, top with the shrimp and Creole sauce mixture, and sprinkle with chopped candied bacon and scallions.
