    Prepare the Steak Tartare

    Finely chop the beef tenderloin and combine it with capers, red onion, Dijon mustard, Worcestershire sauce, salt, and black pepper in a bowl. Mix well and set aside.

    Make the Egg Yolk Jam

    In a small saucepan, combine egg yolks, sugar, water, and salt. Cook over low heat, stirring constantly until thickened. Remove from heat and let cool.

    Prepare Shroomami Aioli

    In a bowl, mix together mushroom powder, mayonnaise, minced garlic, lemon juice, and salt until smooth and well combined. Set aside.

    Fry the Potato Chips

    Heat vegetable oil in a deep frying pan. Fry the thinly sliced potatoes until golden and crispy. Remove from oil and drain on paper towels. Season with salt.

    Assemble the Dish

    On a plate, place a generous scoop of the steak tartare, drizzle with egg yolk jam and shroomami aioli, and serve with fresh potato chips on the side.
