Pickled Celery
In a small saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil, stirring until sugar and salt dissolve. Remove from heat and let cool slightly. Slice celery into small pieces and add to the pickling liquid. Let it sit for at least 30 minutes.

Dill Oil
In a blender, combine fresh dill and olive oil. Blend until smooth. Strain the mixture through a fine mesh sieve to remove solids. Set aside.

Creamy Herbed Horseradish
In a bowl, mix together sour cream, prepared horseradish, and lemon juice. Adjust seasoning as needed.

Serving
Shuck the oysters, placing them on a serving platter. Drizzle with dill oil, add pickled celery on top, and serve with a side of creamy herbed horseradish.
