Prepare the Potatoes
Peel and cut the potatoes into small cubes. Boil in salted water until tender, about 10-12 minutes. Drain and let cool slightly.

Char the Poblano
Place the poblano pepper over an open flame or under a broiler until charred. Remove from heat, place in a bowl, cover with plastic wrap, and let steam for 10 minutes. Peel off the skin, remove seeds, and blend with goat cheese until smooth.

Sauté the Vegetables
In the same skillet, add the remaining olive oil and sauté the summer squash and cherry tomatoes until tender and slightly caramelized, about 5-6 minutes. Season with salt and pepper.

Plating
On each plate, spread a layer of the charred poblano and goat cheese puree. Arrange the sautéed summer squash and cherry tomatoes next to the halibut. Add the crispy potatoes on the side, garnish with fresh herbs, and serve.
