Prepare brine
In a saucepan combine 4 cups water, kosher salt, 2 tbs brown sugar, peppercorns, bay leaves, and smashed garlic. Heat just until salt and sugar dissolve, stirring. Remove from heat and let cool to room temperature, then add 2 cups ice to chill quickly.

Brine the chicken
Place the half chicken (or a whole chicken split in half) in a container or resealable bag. Pour cooled brine over the chicken, ensuring it is mostly submerged. Refrigerate for 2 to 4 hours (maximum 6 hours for a half chicken) to season and help retain moisture. If short on time, brine for at least 1 hour.

Dry & rest
Remove the chicken from the brine and discard brine. Pat the chicken thoroughly dry with paper towels. For crispier skin, place the chicken uncovered on a rack in the refrigerator for 1 hour to dry the skin further (optional).

Prepare rub
In a small bowl combine the paprika, 1 tbs brown sugar, garlic powder, onion powder, ground black pepper, ground cumin (if using), chili powder or cayenne (if using), and 0.5 tsp salt. Mix well to distribute evenly.

Oil and apply rub
Brush the chicken all over with 2 tbs oil to help the rub adhere. Liberally rub the spice mixture over the skin and inside any cavities or under the skin where accessible. Let the rubbed chicken rest at room temperature for 20 to 30 minutes while you prepare the smoker (or up to 1 hour).

Preheat smoker
Preheat your smoker or grill set for indirect cooking to a stable temperature of 225°F to 250°F (107–121°C). If using a charcoal grill, bank coals to one side and set the chicken on the cooler side. Add wood chunks or soaked chips to the coals or smoker box to generate a steady, light smoke.

Smoke the chicken
Place the chicken skin-side up on the smoker grate over indirect heat. Add fresh wood every 45–60 minutes as needed to maintain smoke. Maintain smoker temperature 225–250°F. Smoke until internal temperature in the thickest part of the thigh reaches 165°F (74°C) and the breast reaches 160°F (71°C). For a half chicken this typically takes 1.5 to 2.5 hours depending on size and smoker consistency.

Spritz during cook
Every 30–45 minutes after the first 45 minutes, lightly spritz the chicken with apple juice or apple cider to help keep the surface moist and enhance bark formation. Do not over-spritz — a light misting is enough.

Optional sear/crisp
If you want extra-crispy skin, after resting briefly, place the chicken skin-side down on a hot cast-iron skillet or over direct high heat for 1–2 minutes to crisp the skin, watching carefully to avoid flare-ups.

Serve
Cut the half chicken into pieces (breast, thigh, leg if whole half) and serve warm. Offer extra spritz or pan juices on the side if desired.

Use apple, hickory, or pecan wood to complement the chicken. If using chips, soak 30 minutes and drain; if using chunks, add directly to coals or smoker box. Tuck a couple sprigs of thyme or rosemary near the chicken on the smoker for a subtle aromatic lift, replacing them if their aroma fades during a long cook.
