Prepare and chill glass
Chill a champagne flute by placing it briefly in the freezer or filling it with ice water while you prepare the cocktail. If using ice water, empty and dry the flute before serving.

Combine base ingredients
In a cocktail shaker, add 1 oz gin, 0.5 oz fresh lemon juice, 0.5 oz simple syrup, and a generous scoop of ice (about 1 cup).

Shake
Secure the shaker and shake vigorously for 10–15 seconds until the outside of the shaker feels cold to the touch and the mixture is well chilled and slightly diluted.

Strain into flute
Double-strain the shaken mixture into the chilled champagne flute to remove small ice shards. Pour slowly to leave room for the sparkling wine.

Top with sparkling wine
Gently top the flute with about 3 oz (a splash to three-quarters full depending on flute size) of chilled Champagne or dry sparkling wine. Pour slowly down the side or over the back of a spoon to preserve bubbles.
