Escargot Preparation & Garlic-Parsley Butter

Prepare butter
Soften the 1/2 cup unsalted butter at room temperature until easily spreadable (about 20–30 minutes). If short on time, cut into small cubes to speed softening.

Mince aromatics
Finely mince 4 garlic cloves and 1 shallot. Finely chop 2 tablespoons flat-leaf parsley. These provide the classic escargot flavor and should be finely textured so they incorporate well into the butter.

Make garlic-parsley butter
In a small bowl, combine the softened butter, minced garlic, minced shallot, chopped parsley, 1 teaspoon lemon juice, 1 tablespoon dry white wine (if using), 1/2 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Mix thoroughly with a fork until uniform. Taste and adjust salt or lemon for brightness. If using, fold in 2 tablespoons grated Parmesan or Pecorino for a savory finish.

Preheat oven
Preheat the oven to 200°C (400°F). If you have an escargot dish with wells, use it; if not, use a small ovenproof baking dish or a rimmed baking sheet lined with a shallow layer of coarse salt to steady the snails.

Optional topping
If desired, lightly sprinkle a pinch of additional grated Parmesan over each butter-topped escargot for a gratinéed finish.

Bake
Bake in the preheated oven for 8–10 minutes, until the butter is bubbling and fragrant and the tops are lightly golden. If using a broiler to brown the tops, broil 1–2 minutes at the end—watch carefully to avoid burning.

Toast the baguette slices: while the escargot bakes, slice the baguette and lightly butter each slice (1 tablespoon butter total). Arrange slices on a baking sheet and toast in the oven for 5–7 minutes until golden, or pan-toast in a skillet over medium heat until crisp and browned.
