Directions

1

Prepare the Eggs

In a pot, bring 1 liter of water to a boil. Carefully add the Bootleg Farm eggs and boil for 6 minutes for a soft yolk. Transfer the eggs to an ice bath to stop the cooking process.

2

Prepare the Sausage

Skin the spiced pork sausage and shape it into a thin layer around each soft-boiled egg. Make sure to cover the egg completely.

3

Coat the Eggs

Set up a breading station with three bowls: one with flour, one with beaten eggs (optional), and one with panko breadcrumbs. Roll each sausage-covered egg in flour, dip in egg (if using), and then coat with panko breadcrumbs.

4

Fry the Eggs

In a deep frying pan, heat olive oil over medium heat. Once hot, carefully add the breaded eggs and fry until golden brown, about 4-5 minutes. Remove and place on paper towels to drain excess oil.

5

Make Garlic Mustard Aioli

In a bowl, mix together mayonnaise, garlic mustard, salt, and black pepper to taste. Adjust seasoning as needed.

6

Serve

Serve the Scotch Duck Eggs hot, with a side of garlic mustard aioli for dipping.
