Method
Prepare the Granita
Make the Granita Base
In a blender, combine the prickly pear fruit, lime juice, sugar, and water. Blend until smooth.
Freeze the Mixture
Pour the mixture into a shallow dish and freeze for about 4 hours, scraping with a fork every 30 minutes to create a granita texture.
Prepare the Mignonette
Combine Ingredients
In a small bowl, mix the minced shallots, red wine vinegar, and freshly ground black pepper. Let it sit for at least 30 minutes to meld the flavors.
Serve the Oysters
Shuck the Oysters
Carefully shuck the oysters and place them on a serving platter with crushed ice.
Add Granita and Mignonette
Top each oyster with a spoonful of prickly pear lime granita and a drizzle of mignonette before serving.
