Method

Cooking Instructions

  1. 1

    Prepare the Merguez Sausage

In a mixing bowl, combine ground lamb, minced garlic, cumin, paprika, cayenne, salt, and pepper. Mix well and form into sausage shapes.

  2. 2

    Cook the Merguez

Heat olive oil in a pan over medium heat. Add the sausage and cook until browned and cooked through, about 10-12 minutes. Remove and let rest.

  3. 3

    Make the Couscous

In a saucepan, bring vegetable broth to a boil. Add couscous, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.

  4. 4

    Prepare the Fried Chickpeas

In the same pan used for the sausage, add drained chickpeas and fry until crispy, about 5-7 minutes. Season with salt to taste.

  5. 5

    Cook the Seasonal Vegetables

In another pan, sauté seasonal vegetables in olive oil until tender, about 5-7 minutes. Season with salt and pepper.

  6. 6

Prepare the Ras el Hanout Jus

In a small saucepan, combine 1 cup of water with Ras el Hanout. Simmer for 5 minutes to infuse flavors.

  7. 7

    Serve the Dish

Plate the couscous, top with the Merguez sausage, fried chickpeas, sautéed vegetables, and drizzle with Ras el Hanout jus. Garnish with chopped parsley.
