Activate the Yeast
In a large mixing bowl, combine warm water, active dry yeast, and brown sugar. Let sit for about 5 minutes until frothy.

Make the Dough
Add the flour and salt to the yeast mixture. Mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.

Let the Dough Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape the Pretzels
Preheat the oven to 450°F (230°C). Divide the dough into 12 equal pieces. Roll each piece into a long stick (about 10-12 inches long) and shape them into pretzels.

Prepare the Baking Soda Bath
In a large pot, bring 10 cups of water to a boil. Add the baking soda to the boiling water. Boil each pretzel stick for about 30 seconds, then remove and place on a baking sheet lined with parchment paper.

Bake the Pretzels
Melt the unsalted butter and brush it over the pretzel sticks. Sprinkle with coarse sea salt. Bake for 12-15 minutes, or until golden brown.

Remove from the oven and let cool slightly before serving with beer cheese.
